"Skinny" Cafe Rio style Creamy Tomatillo Dressing

If you live in Utah, you have no doubt experienced the culinary delight that is Cafe Rio. It is the kind of food that haunts you for days after you've eaten it...you just need more! Despite all the awesome food options on their menu, I find myself continually going back just to try their Creamy Tomatillo Dressing. This stuff is like liquid heaven. Seriously. Unfortunately, this small cup of dressing goodness comes in at a hefty 130 calories so I try not to indulge too often. I've tried multiple "copycat" recipes that were just never as good, all of which required lots of mayo and buttermilk. Since I've been eating so much healthier the last year, I decided to attempt a "skinny" version. I'm pleased to say that taste-wise, this is the closest I've come to the original and it comes in at only 53 calories a serving.





Skinny Cafe Rio style Creamy Tomatillo Dressing
(Makes 4 servings)

• 1/2 c. Chopped fresh cilantro
• 1/4 c. plain non-fat greek yogurt
• 1 tbs Extra virgin olive oil
• 2 tbs Lime juice
• 2 tbs Almond milk (or whatever milk you have on hand)
• 1 tsp Minced garlic
• 1 tsp Chili powder
• 1/2 packet buttermilk ranch dressing mix

1. Pulse in a magic bullet, or a blender if thats what you have. pulse until all ingredients are well mixed.
2. Enjoy!
